Special Irish Coffee Brownies


Makes 36 brownies Ingredients
  • 1 1/4 cups granulated sugar
  • 3/4 cup butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup milk
  • 1/4 cup Irish whiskey
  • 2 tbsp instant coffee crystals
  • 1 cup chopped walnuts
  • 2 1/2 cup sifted powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp Irish Whiskey
  • 1 1/4 tsp vanilla
  • 3 to 4 tbsp brewed coffee
  • Chopped walnuts (optional)
Directions
1. Preheat oven to 350oF. Grease 15x10x1-inch baking pan; set aside

2. In large saucepan, heat granulated sugar, butter, and 1/2 cup cocoa butter over medium heat until butter melts, stirring constantly. Remove from heat. Add eggs and 1 teaspoon vanilla; beat lightly with spoon just until combined.

3. In bowl, stir together flour, baking powder and baking soda; set aside. Stir together milk and 1/4 cup Irish whiskey; stir in coffee crystals. Add flour mixture and milk mixture alternately to chocolate mixture, beating with spoon after each addition. Stir in 1 cup chopped nuts. Pour into prepared pan. Bake 15 to 20 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan on wire rack.
4. Meanwhile, stir together powdered sugar, 2 tablespoons unsweetened cocoa powder, 1 tablespoon Irish whiskey, and 1 1/4 teaspoon vanilla. Stir in enough of the brewed coffee to make of drizzling consistency. Spread over brownies. If desired, sprinkle with additional chopped nuts. Cut into bars. Offer these outstanding brownies for dessert with a scoop of vanilla ice cream and fresh strawberries.

Super Choco Cream Cheese Brownies


  • 1- 6 oz package of semisweet chocolate pieces (1 cup)
  • 2 tablespoons butter
  • 1/2 cup all- purpose flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup chopped walnuts (optional)
  • 1- 3 oz package of cream cheese, softened
  • 1 beaten egg


Preheat oven to 350F. Grease and lightly flour an 8x8x2 inch baking pan. Melt the chocolate and butter. Let it cool.

Mix the flour, baking powder & 1/4 teaspoon salt. In a mixer, beat 2 eggs and 1 tsp of vanilla, gradually adding 3/4 cup of sugar. Continue to beat the eggs until thick and turns lemon in color.

Add the dry ingredients to the egg mix and mix well. Stir in the chocolate and nuts.

In a separate bowl, beat the cream cheese and remaining 1/4 cup of sugar until fluffy. Stir in the remaining beaten egg and 1/2 tsp of vanilla.

Spread half of the chocolate mixture into the pan. Then pour the cream cheese mix on top of the chocolate. Pour the remaining chocolate mixture on top.

If desired, swirl layers to marble.

Bake at 350F in oven for about 45 minutes. Cool on a wire rack. Cut into bars.

Super Fudge Brownies

Makes 16 brownies

Ingredients:
  • 1/2 cup butter
  • 3 oz. unsweetened chocolate, coarsely chopped
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 cup chopped nuts (optional)
  • Chocolate and Cream Cheese Frosting
Directions:

1. Preheat oven to 350oF. Grease 8x8x2-inch or 9x9x2-inch baking pan; set aside


2. In medium saucepan, melt butter and chocolate over low heat, stirring constantly. Remove from heat; cool.


3. Stir sugar into cooled chocolate mixture in saucepan. Add eggs, one at a time, beating with wooden spoon just until combined. Stir in vanilla.


4. In bowl, stir together flou and baking soda. Add flour mixture to chocolate mixture; stir just until combined. If desired, stir in nuts. Spread batter in prepared pan.


5. Bake for 30 minutes for 8-inch pan or 25 minutes for 9-inch pan. Cool in pan on wire rack. If desired, frost with Chocolate and Cream Cheese Frosting. Cut into bars. Store, covered, in refrigerator.


Chocolate and Cream Cheese Frosting


In a saucepan, melt 1 cup semisweet chocolate pieces over low heat, stirring constantly. Remove from heat; cool. In a small bowl, stir together two 3-ounce packages softened cream cheese and 1/2 cup sifted powdered sugar. Stir in melted chocolate until smooth.

Peanut Bar Candy Brownies


Makes 50-70 bite-size brownies

Ingredients:
  • 1 1/4 cups finely crushed graham crackers (about 18 crackers)
  • 1/4 cup sugar
  • 1/4 cup finely chopped dry-roasted peanuts
  • 1/2 cup butter, melted
  • 1/2 cup butter
  • 2 oz. unsweetened chocolate, cut up
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2/3 cup all-purpose flour
  • 1/2 cup chopped peanuts
  • Peanut Butter Frosting
  • 1/4 cup honey-roasted peanuts or regular peanuts
Procedure:

1. Preheat oven to 350oF. For crust: In medium bowl, combine crushed graham crackers, 1/4 cup sugar, and 1/4 cup finely chopped peanuts.
Stir in 1/ 2 cup melted butter.
Press mixture evenly into bottom of ungreased 11x7x1 1/2
-inch baking pan.
Bake 5 minutes; cool.


2. For filling: in a large heavy saucepan, melt 1/2 cup butter and chocolate over low heat, stirring occasionally. Remove from heat; stir in 1 cup sugar, eggs and vanilla just until combined.

Stir in flour and 1/2 cup chopped peanuts. Spread evenly over crust.

Bake for 20 minutes. Cool completely in pan or wire rack.
Spread with Peanut Butter Frosting. Cut into 1-inch squares. Place a few honey-roasted peanuts on each square.



Peanut Butter Frosting
In a mixing bowl, beat 1/4 cup butter and 2 tablespoons peanut butter with electric mixer or low speed for 30 seconds.

Gradually add1 cup sifted powdered sugar, beating well. Beat in ` tablespoon milk and 1/2 teaspoon vanilla.

Gradually beat in 1 cup sifted powdered sugar and enough milk to make frosting of spreading consistency.

Procedure:

1. Preheat oven to 350oF. Grease 8x8x2-inch baking pan; set aside.

2. Cut up chocolate. In a medium saucepan, melt chocolate and 1/2 cup butter over low heat; stir constantly. Remove from heat; cool slightly. Stir in granulated sugar. Add eggs, one at a time, beating with spoon just until combined. Stir in vanilla.


3. Combine flour and baking soda.
Add flour mixture to chocolate mixture; stir just until combined. Spread in prepared pan. Bake for 30 minutes.

4. Dissolve coffee crystals in crea. In bowl, beat powedered sugar and 2 tablespoons butter with electric mixer on medium speed. Add coffe mixture; but until creamy. If necessary, add a little whipping cream to reach spreading consistency. Spread over warm brownies. Chill about 1 hour or until topping is set.


5. Carefully spread Chocolate Frosting over brownies. Chill until frosting is set. Cut into bars.


Chocolate Frosting:

In a small saucepan, combine 1 cup semisweet chocolate pieces and 1/3 cup whipping cream. Stir over low heat until chocolate is melted and mixture begins to thicken.
