Healthy Vegetarian Carob Brownies

HEALTHY VEGETARIAN CAROB BROWNIES
16 servings

2 cups whole-wheat pastry flour
2 teaspoons baking powder
1/3 cup carob powder
1/3 cup honey
1 cup water
1/2 cups unsweetened applesauce
1 teaspoon vanilla (or 1/2 teaspoon only if watkins)
1/4 cup chopped nuts

  • In a large mixing bowl, combine the following ingredients: flour, carob powder and baking powder
  • In a separate bowl, thoroughly mix the remaining ingredients, except chopped nuts.
  • Add dry ingredients to wet ingredients and mix well.
  • Stir in nuts if desired.
  • Pour batter into a nonstick or lightly oiled 8-inch square baking dish.
  • Bake at 350 for 35 minutes.

What is "carob powder"?

Carob powder is derived from a tropical pod called carob containing a sweet, edible pulp and inedible seeds. It is dried and after drying, the pulp is roasted and ground into a powder. It resembles cocoa powder but with a difference in terms of flavor and texture. Carob is also sweeter.

One tbsp of unsweetened carob powder has about 25 calories, no fat, no saturated fat, no cholesterol, with about 6 grams of carbohydrate. Just for comparison, a tablespoon of unsweetened cocoa powder has 12 calories, 1 gram fat, no saturated fat, no cholesterol and 3 grams carbohydrate.

Carob is caffeine-free which makes it a healthier choice for some health conscious individuals although not as flavorful as the chocolate. Aside from that, carob also contains three times as much calcium as cocoa powder.

Special Irish Coffee Brownies


Makes 36 brownies Ingredients
  • 1 1/4 cups granulated sugar
  • 3/4 cup butter, softened
  • 1/2 cup unsweetened cocoa powder
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup milk
  • 1/4 cup Irish whiskey
  • 2 tbsp instant coffee crystals
  • 1 cup chopped walnuts
  • 2 1/2 cup sifted powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp Irish Whiskey
  • 1 1/4 tsp vanilla
  • 3 to 4 tbsp brewed coffee
  • Chopped walnuts (optional)
Directions
1. Preheat oven to 350oF. Grease 15x10x1-inch baking pan; set aside

2. In large saucepan, heat granulated sugar, butter, and 1/2 cup cocoa butter over medium heat until butter melts, stirring constantly. Remove from heat. Add eggs and 1 teaspoon vanilla; beat lightly with spoon just until combined.

3. In bowl, stir together flour, baking powder and baking soda; set aside. Stir together milk and 1/4 cup Irish whiskey; stir in coffee crystals. Add flour mixture and milk mixture alternately to chocolate mixture, beating with spoon after each addition. Stir in 1 cup chopped nuts. Pour into prepared pan. Bake 15 to 20 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan on wire rack.
4. Meanwhile, stir together powdered sugar, 2 tablespoons unsweetened cocoa powder, 1 tablespoon Irish whiskey, and 1 1/4 teaspoon vanilla. Stir in enough of the brewed coffee to make of drizzling consistency. Spread over brownies. If desired, sprinkle with additional chopped nuts. Cut into bars. Offer these outstanding brownies for dessert with a scoop of vanilla ice cream and fresh strawberries.
